Growing up in the mid-west, veggies rarely made an appearance on my dinner plate. Not because I didn’t like them, but mostly because we really didn’t have a chance to meet.
And when I did start courting my veggies, Brussels Sprouts were not on my staple list. It actually wasn’t until a thanksgiving dinner where I had my first encounter with this awesome dish!
It was sooo awesome, I couldn’t stop eating them and I was now addicted to this new sensation called vegetables!
It wasn’t until after enjoying this dish that I had Brussels sprouts cooked in a traditional not so tasty way. No wonder no one likes Brussels sprouts! I couldn’t believe that with this awesome Roasted Fresh Brussel Sprouts Recipe, it could turn a normal blah veggie into something so spectacular!

Jessica’s Roasted Fresh Brussel Sprouts Recipe
- 2 lbs Brussels Sprouts, trimmed and halved (quartered if large) – Costco has a 2 lb bag
- 5 cloves garlic, minced fine or pressed through a garlic press
- 1/2 cup water
- 2 tablespoons extra virgin olive oil
- 1/2 teaspoon sea salt
- 1/2 teaspoon black pepper
Move oven rack to the upper third and preheat to 425 degrees.
In a 9 x 13 inch baking dish, toss together Brussels Sprouts, garlic, water, oil, salt, and pepper and spread out in a single layer. Or put all that together in a zip lock freezer bag, shake to get a good even spread, then put in the dish.
Bake for 40-50 minutes until caramelized to taste, tossing once about 25 minutes into cooking time. Remove from oven and toss the Sprouts in the pan scraping up the brown bits into the sprouts.
