Ever wonder if fast easy healthy breakfast recipes really exist?
I have been talking about breakfast for years with my clients and have found that it is not only the most important meal of the day, but also the most challenging.
And the biggest problem is that we:
- Skip breakfast
- Don’t eat enough
- Go with instant for convenience
- Eat too many carbs
And that is ok, but once you know that is the problem it is time to find a solution that will help. But before we dive into solving the problem lets discuss why we do what we do…
I just don’t have time for Breakfast!
I totally agree! I am up at 5 am every morning heading to work to meet my first client. And my days are full, I burn a ton of calories, and skipping breakfast is not an option. So, I have to prepare.
And I know some of you are in the same boat. Balancing kids, schedules, work, and sheer exhaustion, who has time to make breakfast?
You grab a breakfast bar, mow down a few pop tarts, or worse; you skip breakfast all together! Mostly because you just don’t have time.
The Breakfast Solution
What if I told you I had a breakfast solution that is fast and easy and you only had to make it once? Would you do it? I mean, if you are like me, a sometimes lazy husband (not always, but sometimes) or a super busy mom, could you spare 15 minutes to make breakfast for the week?!
I know you can, so let’s give it a shot…
My fast easy healthy breakfast recipes
Ok, so when it comes to breakfast here are the kings:
Whole Grained Oats – Yes oatmeal! But it has to be either steel cut oats or old fashioned. Not that instant crap with the cartoons on the box. In order to make instant oats they actually take all the good stuff out of the oats to make it cook so fast. Which defeats the purpose.
How to make instant oatmeal…Step one, throw it in the trash!!
Greek Yogurt – Typically I stay away from all dairy, but have started dating Greek Yogurt again. I mean she’s packed full of protein, a good probiotic, and with a little fruit doesn’t taste so bad.
Eggs– Eggs are the best source of protein on the planet and are a breakfast staple. However, the challenge is mixing it up so you’re not eating the same old thing every day. Plus, who has time to make this every morning?
How much should I eat?
OK, for the busy moms I would suggest between a ¼ to ¾ cup of cooked oats each morning depending upon your daily activity. That with a couple of eggs for protein or Greek yogurt and maybe some fruit and your servings should be spot on. Just find the balance that works for you.
If you are trying to lose weight, don’t cut back, add more to feed your exercise routine.
For us lazy dads or bigger dudes, 1 or 2 eggs ain’t gonna do it! I eat 5 when I’m just getting started. So, consider that and eat between ¾ to 1 cup of whole grained oats.
How to make breakfast Fast and Easy
Since I am always on the go in the morning, I prep all my meals. But I don’t spend hours doing it, because I cook the staples and then portion them out for the week.
Oats- Make a few cups that you think you can eat during the week. Your serving times 5 to 7 days.
Portion them out in small containers and put it in the fridge.
Do the same with all of your breakfast staples: Oats, Protein, and Fruit
Follow the directions on the box and it will take less than 15 minutes when you get a hang of it.

My Fast and Easy Modifications
Take the recipe and use an awesome blender like one of my favorites.
Then make waffles out of them with your favorite waffle iron.
Make enough for a week, and freeze them or put them in the fridge. Then, when you are on the go, just grab the portion and eat them in the car or at your desk. Shazamm! That was fast and easy…
I also use my Nutribullet blender to make everything else easy. Put your cooked oat portions in the blender with Greek yogurt, add some fruit and blend it up the night before. Then you have it ready to hit the road in the morning.
Or if you didn’t have time to make oatmeal, use the emulsifying blade and turn your oats into dust! Just blend them first without any liquid. Then add your milk, fruit, protein powder, or greek yogurt. You won’t even taste it and you will get the breakfast you need.
